Guarapo is fresh-pressed sugarcane juice, sold from carts and roadside stands across Cuba and poured at every family gathering on the island. It is sweet, green, unmistakably of the place — and for a lot of our customers it is the first thing they remember about home.
We took the name because it sets the bar. Cane juice is only good fresh; the moment you bottle it, it stops being guarapo. Same rule in our kitchen.
